Red Lobster's Swordfish With Tomato Basil Relish

Ingredients:

Cooking Directions:

4 swordfish steaks - (8 to 10 oz ea)
1 cup diced fresh tomatoes
1 teaspoon red wine vinegar
1 tablespoon vegetable oil
1 tablespoon chopped fresh basil
1/2 teaspoon minced fresh garlic
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper

Cook fish on a well-oiled grill 4 to 5 minutes each side.

Mix remaining ingredients. Heat in a sauce pan over low or microwave
until all ingredients are warmed through. Do not cook tomato mixture or
else it will become mushy and lose its fresh flavor.

This recipe yields 4 servings.
