Ingredients:

10 ancho chilies -- stemmed, seeded
3 1/2 cups orange juice
1 teaspoon ground cumin
1/2 teaspoon allspice
2 ounces white wine vinegar
1 tablespoons anatto seeds
2 garlic cloves
Kosher salt -- to taste
Freshly-ground black pepper -- to taste

Simply puree all the ingredients in a blender until smooth. Season
afterwards with salt and pepper and begin marinating.

This is a great Southwestern marinade for seafood, chicken, even beef
tenderloin!
