Chinese Imperial Palace's Almond Cookies

2 cups cake flour
1 teaspoon baking powder
1 cup butter -- room temperature
1 cup sugar
2 large eggs yolks
1/2 teaspoon lemon extract
1 teaspoon almond extract
75 blanched almonds
1 egg yolk
1 tablespoon water

Preheat oven to 300 degrees. Cream butter and sugar together until light
and fluffy. Sift together flour and baking powder. Add 2 eggs yolks and
the extracts. Blend in dry ingredients.

Roll dough into 1-inch balls and place on an ungreased cookie sheet.
Press an almond into each ball and flatten slightly. Make an egg wash
using egg yolk, and water, brush this over each cookie.

Bake, cooking for 15 to 18 minutes or until golden brown.

This recipe yields about 75 cookies.
